Meat juice is the so-called cell juice of meat. This is the liquid that comes out of a processed piece of meat, such as a steak, when you fry it and cut it. Because it is usually red in color, it looks like blood, but is clearly different: while blood is deep red and viscous, you can recognize meat juice by its transparency and thinness. The red color of meat juice comes solely from the protein myoglobin it contains, which turns red when it comes into contact with oxygen.

Another important fact why meat juice is not blood is the possibility of blood clots. These would form due to denaturation if you heat the meat above 45 degrees Celsius. This destroys the structure of proteins and peptides within the blood. While no direct changes are seen in meat juice, a heated steak would be full of clots.
